Here is an interview with Howard Simpson:
Who is your primary cooking inspiration?
Chef Brian Malarkey. His love for seafood and the passion he brings to a plate amazes me tremendously. Also, his success
in San Diego over the past few years has just validated Chef Malarkey is one of the best chefs in California!
What are your favorite food blogs (besides your own)?
Sam the cooking guy.
What is your favorite/least favorite dish to eat?
My favorite dish to cook at home is stuffed pork roulade. I use pork loin, usually with a basil pesto and asparagus filling, with cauliflower puree and season vegetables. That dish with a nice bottle of Chardonnay and I'm good to go! It's my own comfort food!
What is your favorite go-to dish to bring to a potluck?
My favorite dish to bring to a potluck would have to be my super awesome guacamole! You got to love chips and guacamole on a summer day in San Diego!
What is your favorite/least favorite type of cuisine and why?
My favorite types of cuisine are Japanese, Vietnamese and Mexican! My least favorite cuisine would have to be American Southern Food. Even though the flavors are very full, it's just too heavy for me. I'm just not a fan!
What travel destinations have you either been to or want to travel to for food inspiration?
I want to go to Japan so badly! But also I would love to travel to France, as it's the heart of the culinary world. I would love to experience Michelin star food and service!
What are your top 3 songs to cook to?
"Ghost on the Dance Floor" by Blink 182, "Bulls in the Bronx" by Pierce the Veil, and "One of those nights" by The Cab.
Why did you want to be a contestant?
I wanted to show the world that no matter your struggle in life, no matter what obstacles come your way, anything is possible. When I was leaving the Army, a lot of my fellow soldiers would always say, "you'll be back in 6 months" or " the economy is tough, you won't find a job" or "you're a war vet, you won't succeed." Well, now I can say I cooked with some of the best home cooks in America!
What is your favorite comfort food and why?
My favorite comfort food is Mexican cuisine. It's what I grew up on, and growing up in San Diego, a California burrito always brings me home!
Pick 3 words that define what meals with friends and family mean to you.
Epic, priceless, yummy.
